IL SEVERO IGT TOSCANA
Wine is a centuries-old art in motion and in constant evolution.
IL SEVERO was born from an intuition: to represent a vintage by interpreting it at its maximum expression among the grapes present in the company with the exception of Sangiovese.
Elegant nose with notes of cassis and red tea; in the mouth the wine finds energy in a beautiful acid verve which makes the sip sapid, fragrant, long and memorable.

AGE OF VINEYARD: 12 years

HARVEST: Manual in boxes followed by selection of the bunches on a first sorting table and selection of the berries after destemming.
VINIFICATION: Destemming, partial crushing, placing in wooden tank for fermentation at a low controlled temperature and maceration for about 30 days.
AGING: 30 months in French barrique and barrels followed by minimum 12 months in bottle.
